Cooking Workshops in Essaouira: Journey into the Heart of Moroccan Flavors

Cooking Workshops in Essaouira: Journey into the Heart of Moroccan Flavors

In Essaouira, you don't just watch Moroccan cuisine — you live it, with your hands in the flour and your nose in the spices. Between the Atlantic sea spray and the ochre alleyways of the medina, the city hides some of the most authentic cooking workshops in Morocco. Slow-cooked tagines, hand-shaped gazelle horns, amlou prepared your way... here, every workshop is a gateway to real Moroccan terroir. If you're looking for an activity in Essaouira that blends pleasure, culture and memories to take home, here is everything you need to know about our three cooking workshop formulas.

Why take a cooking workshop during your stay in Essaouira?

Because a tagine enjoyed at a restaurant is nice. But a tagine you've prepared yourself, with a local chef passing on her family secrets, is another story. And above all, it's an activity everyone enjoys, rain or shine on the corniche — a real plus in Essaouira, a city known for its sometimes unpredictable weather. A cooking workshop in Essaouira is:

  • A real immersion in Moroccan daily life, far from tourist traps
  • A chance to learn gestures and recipes passed down through generations
  • A friendly activity, perfect for couples, families or friends
  • A lasting memory: you go home with recipes (and sometimes a jar of amlou) in your luggage

Our 3 cooking workshops in Essaouira

The Moroccan Cooking Workshop: full immersion in the medina

This is our most complete formula, and clearly the most indulgent. Set in a beautifully restored former almond warehouse, right in the heart of the medina, this workshop plunges you for nearly 4 hours into the secrets of Moroccan gastronomy, alongside a passionate chef. On the menu: zaalouk, briouates, tagine, couscous — classics that vary according to the season and what the market offers that day. While the dishes simmer, you head to the spice souk for a short visit that awakens the senses. And to finish, everyone gathers around a large table to enjoy the fruit of their work, in an atmosphere as warm as a family meal. Available Monday to Saturday.

The Oriental Pastry Workshop: sweet, creative and deeply satisfying

For those with a soft spot for Moroccan sweets, this 2-hour workshop is a real bubble of pleasure. You learn to make the great classics of local pastry — gazelle horns, ghribas — under the watchful eye of an expert who shares her tips and tricks. The workshop naturally ends with a tasting, accompanied by mint tea served according to tradition. A perfect activity to share as a family, since it's open from age 8: children love getting their hands in the dough as much as parents do. Tuesdays, Thursdays and Saturdays from 3:30 pm to 5:30 pm.

The Flavours Workshop: fine oils, rare honeys and homemade amlou

The most sensory of the three. This workshop takes you on a journey through the treasures of Moroccan terroir with a guided tasting of fine oils, rare honeys and roasted almonds. You learn to recognise their origins, their flavours and their artisanal production methods — a real crash course on the products that make the country's culinary richness. The icing on the cake (or rather on the toast): you then prepare your own amlou, that typically Moroccan paste made from almonds, argan oil and honey, and leave with your personalised jar. A gourmet souvenir that continues the journey once you're back home. Wednesdays and Fridays from 3:30 pm to 5:30 pm.
